Many of my readers continue to ask for something easy to serve their gluten free guests that they would want to eat too! A lot of those inquiries come from people who are friends/family with someone who eats gluten free and they are trying their best to accommodate visits that involve food. Since they don't actually consume gluten free foods on a normal basis, they never know what to provide. Add to that the complexity of cooking and they're afraid their gluten free guests will starve.
Have no fear! There are many great mixes worth keeping around for impromptu (or planned) gluten free visitors. This is our favorite blueberry muffin mix! This is from a company called "Authentic Foods." It's another one of the "easy bake" mixes that requires very few ingredients, you mix it with a spoon, and then bake.
I keep extra mixes around for weekends, but have found recently that the boys/men in my family can polish off the dozen muffins in about four hours, so it doesn't last too long in my house.
Much to my surprise, Amazon.com is one of the online stores that just started selling these. I think Whole Foods also carries them.
This recipe mix makes one dozen medium size muffins and takes less than 30 minutes from start to finish.
